Makes 1 litre - ish

 

2 large eggs
2 cups of double cream or whipping cream
1 cup full fat milk
3/4 cup sugar
2 tsp vanilla extract

Whisk the eggs in a mixing bowl until light and fluffy (1-2 minutes). Whisk inthe sugar, a little at a time, then continue whisking until completely blended (about a minute more). Pour in the cream, milk and vanilla extract and whisk well to blend.

Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions.
