1/3 cup orange juice (or more depending on taste)
2 to 3 tbsp of Cointreau - NOT MORE or the ice cream won't freeze!!
2 large eggs
2 cups of double cream or whipping cream
1 cup full fat milk
3/4 cup sugar
Whisk the eggs in a mixing bowl until light and fluffy
(1-2 minutes). Whisk in the sugar, a little at a time, then continue
whisking until completely blended (about a minute more). Pour in the
cream and milk and whisk well to blend. Add the vanilla extract, Cointreau
and the orange juice and blend.
Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions.
